Meet Linda!

Hi there!  My name is Lindsay.  Welcome to my blog and thank you for stopping by!  Why, you ask, is my blog called “Linda in the Kitchen”?  Well, it’s a funny story, actually.  When the iPhone was first released, “Lindsay” would auto-correct to “Linda”.  My friends got a kick out of this.  Little did I know, this name would stick.  So here I am, years later…Linda.

I’ve always loved being in the kitchen.  Cooking and baking, yes please!  I prefer watching cooking shows on TV over all else, and get excited about new food blogs and cookbooks.  After college, I started to spend more time in the kitchen, trying new recipes, using substitutes for dairy/flour/sugar and learning about seasonal ingredients.  Over time, the name Linda became associated with my time spent in the kitchen…hence, Linda in the Kitchen!

I love to cook healthy, seasonal meals and treats.  Recipes…I rarely (maybe never) truly follow a recipe to a Tee.  For me, being in the kitchen is all about being creative and having fun.  Recipes, to me, are more like guidelines to take and make your own.  My recipes are exactly this.  Take them, use them, change it up, get inspired, add your favorite ingredients, but most of all, HAVE FUN.

I enjoy the challenge of taking a recipe and substituting flour, sugar and dairy ingredients with healthier alternatives.  For those of you that are gluten-free, lactose-intolerant or vegan, you’ve come to the right place.  I am a pescitarian, so I tend to make vegan/vegetarian or seafood inspired meals.  My boyfriend, on the other hand, eats LOTS of meat, so most of my recipes are vegetarian with the option of adding seafood and/or meat.  My baked goods range from vegan and gluten-free to the occasional buttery sugary full-fat treat.   During the week, I’m a big fan of the quick, healthy and simple weeknight meals that I can make ahead of time.  On weekends, I love to make internationally-inspired meals that can sometimes take hours to prepare.  Whichever you prefer, you will find it here!
